Default general question about knights

In the knight's first move he lands in front of a pawn and prevents it from advancing. Is it good play to advance the pawn two squares before moving the knight out in general?

No. Not at all. Only a few openings move the bishops pawns first.

1. Nf3 is the basis of a perfectly playable opening system for white.
Known as the Kings Indian Attack. See

http://en.wikipedia.org/wiki/King%27s_Indian_Attack

It was popularised by Fischer.

1. Nc3 is playable too as irregular opening or as a transposition device
to prevent black choosing his favourite line.

1. c4 is playable as English opening

http://en.wikipedia.org/wiki/King%27s_Indian_Attack

and although not as commonly played today

1. f4 is playable as Bird's opening (especially effective against a
weaker player if you have rehearsed the various sharp traps)

Any good chess training software will take you through the basics.
