How do I set up 30/60 SD/60 in the Fritz GUI?

File | New | Long game. Set the first time control to 1hr 0min, 30 moves,
0sec gain; second time control to 0/0/0/0 and thirs to 1hr 0min, 0sec
gain. (Assuming you mean one hour for the first thirty moves and then one
hour to finish the game.)
